Chocolate Cake
1½ cups all-purpose flour
4 tablespoons cocoa
1 teaspoon baking soda
½ teaspoon salt
⅔ cup water
1 tablespoon vinegar
1 teaspoon vanilla
1 egg
1 cup granulated sugar
¼ cup vegetable oil
*Frosting, your choice
  1. Preheat oven to 350°, Grease and flour a 9-inch cake pan.
  2. Stir together in a medium bowl the flour, cocoa, baking soda, and salt; set aside.
  3. Combine water, vinegar, and vanilla in a measuring cup; set aside.
  4. In a large bowl, mix egg, sugar, and oil. Add water and vinegar mixture; blend well.
  5. Add flour mixture in gradual amounts to the liquid mixture. Beat well after each addition.
  6. Pour cake batter into prepared pan. Bake 20 to 25 minutes or until toothpick in center comes out clean.
  7. Let cake cool before frosting.
Makes 1 9 inch cake or 12 cupcakes.
