Black Bean and Corn Salad
1 cup spicy black beans, drained
¼ cup shoepeg corn, drained
¼ cup zucchini, chopped
2 T sweet red pepper, chopped
1 T green onions, chopped
1 T fresh cilantro, chopped
1 t jalapeno pepper, seeded, chopped
1 t minced garlic
2 T white balsamic vinegar
½ tsp olive oil
Dash of pepper
Mix all ingredients together in a large bowl and chill for at least 2 hours prior to serving.
