Black Bean and Rice Burritos
½ (15 ounce) can black beans, rinsed and drained
½ (14.5 ounce) can diced tomatoes, drained
½ teaspoons garlic powder
½ teaspoon ground cumin
1 cup cooked rice
½ cup salsa
4 flour tortillas, warmed
½ cup Enchilada sauce
½ cup Cheddar cheese

  1. Preheat oven to 350°.
  2. Mix beans, tomatoes, garlic powder, cumin, rice, and salsa together in medium bowl.
  3. Spread mix on tortillas, roll into burritos, place seam side down in 8x8 greased pan. Top with sauce and cheese, bake 10 minutes. Serve with lettuce and sour cream.
