Cheese Enchiladas
1 c. cheese combination of Monterey Jack and cheddar cheese
5 oz. enchilada sauce (½ can)
4 tortillas
  1. Spray glass baking dish.
  2. Place ¾ cheese in tortillas and roll. Place open edge down in pan.
  3. Pour enchilada sauce over top.
  4. Sprinkle with remaining cheese.
  5. Microwave until heated through. (Cheese is melted and sauce is hot.)

Yield-4 servings.
