Chili Mac Skillet
¾ cup uncooked macaroni
½ lb ground beef
¼ cup chopped onion
¼ cup chopped green pepper
1 minced garlic clove
1 (14½ oz.) diced tomatoes, undrained
1 cup kidney beans, rinsed and drained (½ can)
½ c. frozen corn, thawed
2 tsp. chili powder
½ tsp. salt
¼ tsp. cumin
Shredded mozzarella cheese for topping
Cook macaroni according to package directions. In large skillet, cook beef, onion, green pepper and garlic over medium heat until meat is no longer pink; drain. Stir in tomatoes, beans, corn, chili powder, salt and cumin, and macaroni. Bring to boil. Reduce heat; cover and simmer for 10 minutes or until heat through. Garnish on plate with cheese.
