Manicotti with Cheese Filling
4 manicotti shells, cooked according to package directions
4 oz. ricotta cheese, *drained
4 oz. cottage cheese, *drained
2 T. grated Parmesan cheese
2 T. chopped spinach
¼ teaspoon salt
Dash pepper
8 oz. spaghetti sauce
2 oz. mozzarella cheese, shredded
Grease a glass baking dish. Spoon a very small amount of sauce into bottom of baking pan to prevent noodles from sticking to pan. Combine cheeses, spinach, salt and pepper for filling. Spoon cheese mixture into cooked manicotti shells and place filled manicotti in baking pan and spread remaining sauce on top. Sprinkle mozzarella cheese over top. Cover baking dish with saran wrap and vent 1 corner. Cook in in microwave until cheese is melted in shells.
