Pumpkin Chocolate Loaf
3 ½ c. sugar
3 ¾ c. flour
1 ¼ c. vegetable oil
1 ½ tsp. salt
3 eggs
1 ½ tsp. baking powder
1 can (1 oz. each) unsweetened chocolate, melted and cooled
1 ¼ tsp. cinnamon
1 tsp. ground cloves
1 ½ tsp. vanilla
½ tsp. ground nutmeg
2 c.(12oz.) semi-sweet chocolate chips
  1. Preheat oven to 350°. In a large bowl, combine sugar and oil. Add eggs & mix well. Stir in the pumpkin, melted chocolate and vanilla. Mix well.
  2. Combine dry ingredients in separate bowl. Stir into pumpkin mixture just until blended. Hand stir in chips.
  3. Transfer to three lined 9x5x3 inch loaf pans. Bake at 350° for 55-65 minutes or until a toothpick inserted near the center comes out clean.
  4. Cool for 10 minutes before removing from pans to wire racks.
