Whole Grain Chocolate Chip Cookies
1 c. + 2 tbsp. light brown sugar
2 eggs
1 c. whole wheat flour
1 tbsp. baking powder
½ tsp. salt
6 oz. chocolate chips (½ pkg.)
¾ c. butter, softened
1 tsp. vanilla
¼ c. wheat germ
½ tsp baking soda
2½ c. quick oats
Preheat oven to 350°. Cream together brown sugar, softened butter, egs, and vanilla. In a small bowl, whisk together flour, wheat germ, baking powder, baking soda, and salt. Add dry ingredients to creamed mixture. Stir in oats and chocolate chips. Drop by teaspoons onto a parchment-lined baking sheet. Bake 8-10 minutes. Makes about 2 doz. cookies.
