Wild Rice Soup
1 medium onion
1 carrot, diced
1 stalk celery, diced
½ c. margarine (sometimes I use ¼ cup to cut back on fat)
½ c. flour
1½ c. water
3 cups chicken broth
¾ c. Canadian bacon, diced (I also use cooked, diced, chicken or ham when I dont have bacon)
1½ c. Uncle Bens original wild rice, cooked (I use most of the package)
2 c. fat free half and half
Saute onion, carrot, and celery in margarine until onion is clear. Stir in flour and cook for 3-5 minutes. Blend in water and broth. Bring to a boil, stirring constantly. Add meat, half and half, and wild rice. Reduce heat and simmer for 20 minutes.
